Ingredients
- ¼ cup oil, to fry
- 1 ½ tablespoons ginger (finely minced)
- 1 ½ tablespoons garlic (finely minced)
- 100 g Kind Grind Mince
- 1 tablespoon fermented soy bean sauce
- ½ – ¾ cup water + 1 ½ teaspoons cornstarch (need to test this)
- 1 ½ – 2 tablespoons haidilao mala soup base (or another spicy mala soup base)
- 300 g silken tofu (cubed)
- 2 teaspoons chopped spring onion
Method
- Fry ginger & garlic in oil, then add kind grind. Fry until you get some browning on the Kind Grind.
- Stir in bean sauce for 1 min, then add the water and cornstarch mixture.
- Let the sauce bubble until it thickens a little.
- Stir in the chilli oil and silken tofu cubes. Cook 3-5 mins.
- Finally stir in the spring onions. Once they’re just wilted, it’s done.
